LOL  I probably have at LEAST 10 dozen in the fridge right now, if not more.  We like the boiled eggs on salid, I love to use them in tuna, and deviled eggs are also a big favorite of ours.  I can't for the life of me, peal them to well though, you are right, the older they are, the easier they peel....course beings as ours are fresh, my DH usually peels them for me, he doens't go crazy as fast or easy as I do I guess!!  *giggle*  I've really got to get him to do some for me, so I can make some deviled eggs though, that sounds good!  &lt;BR/&gt;&lt;BR/&gt;I also make more angle food cakes, when we have eggs comming out our ears, cause each one, uses up a dozen eggs....anything that uses lots of eggs is good, when you are running out of space in the fridge!  LOL  We try to give them away, to....but the neighbors don't eat as many eggs as we do I guess. That's how I do it, but I let them boil for a few minutes instead of turning them off immediately, I'm too chicken.  I'm afraid of letting my kids chomp into anything that could be partly cooked.  I'm supposed to do the Ice bath but I tend to forget and they come out fine.  Sometimes a little tough thanks to that extra boiling but I know they are cooked *L*.  And for my egg salad I like some nice chunks of egg white for consistency.  So I use an egg slicer and slice it once, then I turn it sideways and slice it again.  I use the same ingredients you do (but it has to be Dijon mustard for me) and the yolk part mixes in with the mayo and stuff but the white stays a little chunky.  Mmmmm.  I think I may just have one for dinner now! I usually put my eggs in after the water boils, let them go for about 8 minutes then empty the pot and fill it with cold water running on them for a couple minutes.  I like to mix my hardboiled eggs with mayo, some relish, cheese, and tuna for a nice toasted sandwhich.  I also will eat them sliced with a tad bit of butter.
