Hard Boiled Eggs

This may be a little late, but then again--not.

I wanted to know if my readers had any tips for hard boiling the perfect egg.

I have found the best thing to do is to put the eggs directly from the boiling water into ice water. Does anyone else do this? I am not sure why this works. It must have something to do with expanding and contracting with the temperature.

I have also found that older eggs that have set in the refrigerator for a while peel better than fresh eggs. Why is that?

I also understand it is best to put them in the water before bringing the water to boil. I let mine boil for about 5 minutes and then turn off the heat and let them cook for another 5 minutes.

What do you do with your eggs? How long do you cook them?

I love to just peel them and slice them with a sprinkle of salt. I have an egg slicer that works well.

However, I also just LOVE egg salad sandwiches. I peel my egg, add a tad of mayo, a tad of mustard, and a tad of pickle relish in a bowl -- careful, not too much of each. Grab a fork and start squishing it all together until it's one big mushed up mess. Slap it between two peices of toast and enjoy!

I often wonder why I do not think to hard boil eggs at any other time of the years. I do love eating them and they are so easy to make. They are great on salads too.

Someone remind me in July that I like hard boiled eggs, will you please? It is never too late to hard boil eggs.

Thanks for the tips Hummie! I usually put my eggs in after the water boils, let them go for about 8 minutes then empty the pot and fill it with cold water running on them for a couple minutes. I like to mix my hardboiled eggs with mayo, some relish, cheese, and tuna for a nice toasted sandwhich. I also will eat them sliced with a tad bit of butter. Maybe not be the healthiest but totally delish! :)

One of my recipe books says to put the eggs into cold water and bring them to a boil then turn off the heat and let them sit for a while. That's how I do it, but I let them boil for a few minutes instead of turning them off immediately, I'm too chicken. I'm afraid of letting my kids chomp into anything that could be partly cooked. I'm supposed to do the Ice bath but I tend to forget and they come out fine. Sometimes a little tough thanks to that extra boiling but I know they are cooked *L*. And for my egg salad I like some nice chunks of egg white for consistency. So I use an egg slicer and slice it once, then I turn it sideways and slice it again. I use the same ingredients you do (but it has to be Dijon mustard for me) and the yolk part mixes in with the mayo and stuff but the white stays a little chunky. Mmmmm. I think I may just have one for dinner now! My mouth is watering.

Oh, and by the way...you are totally right about "older" eggs peeling easier. My Grandma taught me that a few years ago and Gram is always right! *L* If I ever forget to buy them ahead of time I have a heck of a time peeling them. I always search for the closest expiration date if I am going to boil them.

Hummie,thanks for all your tuts and tips,without them I would be lost.I have learned so much.
We love hard boiled eggs in this family. I boil 6 at a time about every 10 days and put them in the frig to eat whenever.
I learned this tip from a chef years ago when boiling eggs.I let them boli for 8 minutes,immediately put them in cold water and crack every one all over while they are still in the cold water. 5 minutes later the shells just slide off.This had worked for me for years.Of course if you are going to do Easter Eggs don't crack them, lol!

Now you've got me craving boiled eggs!! A little salt, a little pepper, ah yes. And even better when they turn into deviled eggs! Ok, gotta run now and see if there are any eggs in the refrigerator....

We also put the egg in the water and then have the water to boil. After a several minutes of boiling, we take it out or throw out the water and just run the eggs through tap water.

I will remind you in July about this post :)

My mom and brother both love making egg spread too, we haven't tried it with mustard though. but egg sandwiches are oh so yummy!

We have a ton of eggs right now, cause our chickens are laying really well! LOL I probably have at LEAST 10 dozen in the fridge right now, if not more. We like the boiled eggs on salid, I love to use them in tuna, and deviled eggs are also a big favorite of ours. I can't for the life of me, peal them to well though, you are right, the older they are, the easier they peel....course beings as ours are fresh, my DH usually peels them for me, he doens't go crazy as fast or easy as I do I guess!! *giggle* I've really got to get him to do some for me, so I can make some deviled eggs though, that sounds good!

I also make more angle food cakes, when we have eggs comming out our ears, cause each one, uses up a dozen eggs....anything that uses lots of eggs is good, when you are running out of space in the fridge! LOL We try to give them away, to....but the neighbors don't eat as many eggs as we do I guess. Least we won't starve, when the chickens are laying good!! :)

Once I googled hardboiled eggs because my memory is not so great anymore. Turns out Julia Child had a really interesting way to cook hardboiled eggs.

I know the number of eggs you are cooking at one time makes some difference in how you do it.

Ohhh, I'm craving deviled eggs!
